Frugal Foodie: Blueberry mug cake

If you are anything like me, after a good meal you need a little sweet treat. This blueberry mug cake is perfect for those late night cravings. It is egg free and requires no oven, just a microwave! Here’s the recipe that will have your taste buds thanking you. 

Ingredients:

- 4 tablespoons all-purpose flour

- 3 tablespoons white sugar

- 1 teaspoon vanilla sugar

- 1 pinch baking powder

- 3 tablespoons milk

- ½ tablespoon olive oil

- 10 blueberries

- 1 teaspoon confectioners' sugar

Directions:

Step 1: Combine flour, sugar, vanilla sugar, and baking powder in a large mug.

Step 2: Add milk and oil; mix batter well with a fork. Carefully fold in blueberries so they are completely covered with batter.

Step 3: Microwave on high until the cake has risen 50% (30 seconds to 2 minutes depending on the strength of the microwave).

Step 4: Allow to cool in mug for a few minutes before enjoying.
