Frugal Foodie: Scrambled egg sandwich

Breakfast sandwiches are a classic breakfast meal, especially for those who are on the go and need their food to be portable. Eating a healthy breakfast is key to having enough energy to get through the day—this healthy breakfast sandwich is perfect for an on-the-go breakfast for two and is easily customizable.  

Ingredients:

- 2 English muffins, split open

- ¾ cup liquid egg whites

- ½ cup of spinach 

- 2 slices of tomato 

- any additional toppings or spices 

Directions: 

Step 1: Cook egg whites in a pan over medium heat until opaque. Toast the 4 English muffin halves. 

Step 2: Divide egg whites among the English muffins. Top with tomato slices and spinach leaves. 

Step 3: Add any other toppings such as mozzarella cheese, cream cheese, or whatever you are craving.

Step 4: Enjoy a delicious breakfast!
