Avocado toast with egg

If I have said it once, I have said it a million times—breakfast is the most important meal of the day, so why not start it off with a bang? Here is a recipe for avocado toast with egg, a perfect combination for anyone needing the energy to make it through long days. 

Ingredients:

- 2 slices of multigrain toast (or whatever bread you prefer)  

- 2 teaspoons of butter 

- ½ of a medium ripe avocado, sliced or mashed 

- 4 slices of tomato

- 2 sliced of red onion 

- 2 large eggs 

- Salt 

- Pepper

- Shredded cheese (optional)

- Bacon strips, cooked and crumbled (optional)

Directions:

1. Spread butter on slices of bread. Place avocado on toast and smash lightly. Top with tomato and onion slices. 

2. To poach egg, place ½ cup water in a small microwave-safe bowl or glass measuring cup; break an egg into the water. Microwave, covered, on high for 1 minute. Microwave in 10-second intervals until white is set and yolk begins to thicken; let stand for 1 minute before removing the egg with a slotted spoon and placing on top of toast.

3. Finally, season with salt and pepper. Garnish with bacon and cheese if you wish. 

 4. Enjoy!
