Frugal Foodie: Quick and easy minestrone

As we welcome in the colder weather, you might be looking for a hearty soup without the time commitment. Here is a recipe for minestrone soup that is quick and easy to make. 

Ingredients:

- 2 teaspoons of olive oil

- 2 carrots, halved lengthwise and thinly sliced crosswise

- 1 red bell pepper, cut into 1/2-inch pieces

- 8 ounces of green beans, stem ends trimmed, cut into 2-inch lengths

- 3 garlic cloves, thinly sliced

- 1/3 cup of couscous

- 1 can (14.5 ounces) of reduced-sodium chicken broth

- 2 tablespoons of tomato paste

- 1 can (15.5 ounces) of navy beans, drained and rinsed

- Salt

- Flat-leaf parsley leaves (optional)

- Parmesan cheese, for garnish (optional) 

Directions:

1. In a microwave safe dish, add oil, carrots, bell peppers, green beans, and garlic. Stir to coat vegetables in oil. Cover, and microwave for 5 minutes. 

2. Add tomato paste, couscous, navy beans, and chicken broth into the bowl with 1 cup of water and ½ teaspoon of salt. Cover, and microwave on high for 5 minutes or until couscous and vegetables are tender. Garnish with parsley and parmesan if you wish. 

3. Enjoy!
