Frugal Foodie: Buffalo chicken dip

The start of football season is a joyous time, especially for the Bills fans on campus. Delicious snacks can make the season even better. This simple buffalo chicken dip recipe can be made without a slow cooker in less than an hour. 

Ingredients:

- 8 oz. cream cheese, softened

- ½ cup buffalo sauce

- ⅓ cup ranch dressing

- ⅓ cup blue cheese crumbles

- 2 cups chopped chicken, cooked 

- 2 cups sharp cheddar cheese

- 4 scallions, thinly sliced 

- 1 bag of potato chips 

Directions 

Step 1: Preheat oven to 375 degrees.

Step 2: Combine softened cream cheese, buffalo sauce, and ranch dressing in a medium bowl. Stir in the chicken, blue cheese, 1 cup of cheddar cheese, and one half of the scallions.

Step 3: Transfer to an 11-inch-by-7-inch casserole dish. Cover the top with the remaining cheddar cheese. Bake for 18 to 20 minutes at 375 degrees.

Step 4:  Remove from the oven and let rest for 5 minutes. Sprinkle with the remaining sliced scallions. Serve with potato chips for dipping.
