Frugal Foodie: No-Bake Samoas

If you love Girl Scout Samoa Cookies but haven’t been able to get your hands on any recently, this is the recipe for you. This no-bake copycat recipe is very similar to the Girl Scout cookies and is worth trying for when you can’t get the actual dessert.


Ingredients:

1 package of fudge-striped shortbread cookies (20-24 cookies)

1 11-ounce package of caramel bits

3 tablespoons of heavy cream

2 cups of toasted coconut

2 squares of chocolate CandiQuik

How to Make:

  1. Line a baking sheet with foil and place the fudge cookies with the stripe facing up on the cookie sheet. Space them about one-to-two inches apart.

  2. Spread coconut on a foil-lined cookies sheet and place cookies in the 300-degree preheated oven for five minutes. Stir, and then back in the oven again for five-to-seven more minutes. Stir again.

  3. Using a medium, microwavable bowl, combine the caramel with the heavy cream. Then, microwave on high for 30 seconds. Stir, and then microwave again for 15 seconds. Stir again until smooth. 

  4. Fold the toasted coconut into the caramel and heavy cream mixture to combine. 

  5. Quickly put tablespoons of the coconut mixture onto the top of each cookie, then spread over the full cookies. Do with all cookies.

  6. In a bowl, microwave the Candiquik on high for 30 seconds, stirring until smooth. Then, drizzle the chocolate over the cookies. Let everything set for 20 minutes before serving.
