Frugal Foodie: Lemon-garlic kale salad

As we are graced with this newfound warm weather, many of us are looking for a break from our fall favorites: soups, stews, and other cozy meals. Here is a fresh recipe for kale salad with garlic and lemon, a recipe that will surely bring you back to those sunny summer days.  

Ingredients:

- 2 cups of sliced or diced almonds 

- ⅓ cup of lemon juice (fresh, 2-4 lemons)

- Kosher salt

- 4 cloves of garlic, crushed with the flat side of a knife, peeled and left whole

- 10 to 12 ounces of washed and dried kale (with no stems)

- 1 ½ cups of parmesan cheese (optional)

- 1 ½ cups of olive oil 

Directions:

1. Toast almonds until fragrant and golden brown. Set aside to cool. 

2. In a bowl, combine lemon juice and salt. Mix and add olive oil slowly. Add garlic cloves, then set aside to steep. 

3. Remove kale from stems and cut into strips. Bunch strips together tightly and slice into ¼ inch pieces. Do not worry about being precise, the end goal is a kind of slaw. 

4. Place kale in a large bowl. Add almonds and parmesan (if you choose to). Remove and discard the garlic cloves from the lemon and olive oil and dress the salad. Toss salad and add salt as needed. 

5. Enjoy!
