Frugal Foodie: Loaded baked potatoes

Baked potatoes are an easy side dish to support any meal, but with just a few extra ingredients, these potatoes can become a spectacular meal all on their own. With endless variations, here is just one delicious version of loaded baked potatoes. 

Ingredients: 

- 2 large baking potatoes 

- 1 cup colby jack cheese (shredded) 

- 1 can chili with beans 

Directions:

Step 1: Preheat oven to 375 degrees. Rinse potatoes and wrap with foil, bake potatoes in the oven for one hour.

Step 2: After they are removed from the oven, cut a large X on the top of the potatoes to allow room for toppings. 

Step 3: Stir together chili and cheese in a saucepan over medium heat. Stir until the cheese is completely melted, then transfer directly on top of the X made on the potatoes. 

Step 4: Enjoy a delicious meal!
