Frugal Foodie: Grilled eggplant

If you are tired of eating the same grilled chicken every night, this grilled eggplant recipe might just be perfect for you. The dish can be customized easily by changing the seasoning used or adding additional sides/elements!

Ingredients: 

  • 2 small eggplants 

  • ¼ cup olive oil 

  • 1 lime or 2 tablespoons lime juice 

  • 3 teaspoons of cajun seasoning 

Directions: 

  1. Cut the eggplant into even ½-inch thick slices. Brush the slices with olive oil, drizzle with lime juice, and sprinkle with cajun seasoning (and/or seasoning of choice). Let sit for five minutes.

  2. Grill the eggplant slices, covered, over medium heat. Conversely, broil five inches from heat until tender, or for about four to five minutes per side. 

  3. Let cool, and enjoy!
