Frugal Foodie: Cranberry salsa turkey wraps

With classes often occurring back-to-back, it can be difficult to find a time to get lunch at the dining halls on campus. Here is a recipe for cranberry salsa turkey wraps that you can make in advance and take with you on those packed schedule days. 

Ingredients: 

2 cups fresh cranberries, coarsely chopped

1/4 cup sugar

1/4 cup sliced green onions

1 tablespoon minced fresh cilantro

1 tablespoon lime juice

1 jalapeno pepper, seeded and chopped

1/4 teaspoon grated fresh ginger root

3/4 cup spreadable cream cheese

6 flour tortillas (8 inches), room temperature

3 cups shredded cooked turkey

6 lettuce leaves

Directions: 

  1. In a small bowl, combine the cranberries, sugar, onions, cilantro, lime juice, jalapeno, and ginger. Cover and refrigerate for 1 hour.

  2. Just before serving, spread 2 tablespoons of cream cheese over each tortilla. Top with 3-4 tablespoons cranberry salsa, 1/2 cup turkey, and a lettuce leaf. Roll up the tortilla up, and you’re done!
