Frugal Foodie: 10-minute baked potato

As the weather gets colder, I find myself leaning towards warm meals to brighten my days. Here is a recipe for baked potatoes that will fill your stomach as fall looms around the corner and is easy to customize to your dietary needs.  

Ingredients 

  • 1 russet potato

  • Olive oil

  • Salt

  • 2 slices bacon 

  • Shredded cheddar cheese

  • Fresh chive

  • Sour cream

Directions 

  1. Carefully pierce potatoes with a fork. Oil the potato well and sprinkle with salt. Add 2 slices of bacon to the plate and heat in the microwave for 7-9 minutes.

  2. Crush the bacon and save for later. Once cooled, cut the potato vertically and scoop the inside slightly. Add the cheese and microwave for another 30 seconds.

  3. Add the sour cream to the potato. Top with crushed bacon and chives and serve.

  4. Enjoy!
